Local ingredients from trusted suppliers
Trusted local suppliers inspire the menus we offer you throughout the changing seasons. We believe that when you stay at one of our Thwaites Inns of Character, you should get a real taste of the local area. For the past 30 years we’ve been working in partnership with a number of local suppliers and we’d like to introduce you to just a few of them….
Mrs Kirkham’s Lancashire Cheese
Along with being a supplier to upmarket deli counters such as Harrods and Booths, Mrs Kirkham has been a supplier to Penny Street Bridge for 10 years. Mrs Kirkham has been making Lancashire Cheese for over 30 years, a skill that was passed down from her mother, making her the third generation of cheese maker in her family.
Altham’s Butchers
Altham’s history is engrained in the Lancashire region with the original shop founded in 1856 by a local farmer in Morecambe. 150 years later and still true to the region, Altham’s source quality assured English beef and lamb from within the area. Their exquisite tasting meat has been used in Penny Street Bridge’s recipes for over 5 years.
Paganums
A trusted suppliers of both The Lion and The Lister Arms. Paganums rear traditional and rare breeds, which are able to thrive in the outdoor life of the Yorkshire Dales. The company uses a range of traditional farming techniques to produce meat with a fuller flavour.
Mackenzies Yorkshire Smoke House
Mackenzies have been supplying The Lister Arms and The Keswick Lodge for a number of years. Their smokehouse supplies are renowned for their true quality and consistency. Whether we need smoked fish, poultry or cheese, Mackenzies are able to provide us with exactly what we need to make our recipes as tasty as possible.
Pennys of Accrington
With their farming background, Tim Penny and his father, in true Lancastrian spirit, thought it would be cheaper to butcher their own meat than to get other people to do it! Pennys use lamb, pork and beef from only a handful of farms in the Ribble Valley, Trough of Bowland and Lune Valley to ensure that they know exactly where the meat is sourced and how it is reared.
A taste of things to come
You can enjoy choosing from a range of menus which change regularly throughout the seasons to reflect the produce available. You’ll also find a chef’s daily dishes’s board at each inn, inspired by the season and local suppliers.
